Education
I propose to conduct the 15 hour NYCDOHMH Food Protection Course at your facility or at any of four CUNY sites. This is the course currently offered at the New York City Health Department’s Health Academy. At the end of this course, successful students will be awarded a Health Department issued Food Protection Certificate. This certificate is a Health Code Requirement for all supervisors employed at all New York City Retail Food establishments including Street Fairs. The Health Academy trains 15,000 students per year. This prepares Restaurant Mangers in Food Safety, the prevention of Food Borne illness and all relevant aspects of Article 81. of the  NYC Health code. It will include expanded emphasis on Vermin control at restaurants including concepts from Dr Corrigan’s Health Department Vermin Control program lectures.
This course satisfies both legal requirements for restaurants and the need in the community for continuing education that aids in employment. The work force in the restaurant industry may be as high as 200,000, with projected continued growth.
It is only upon completion of this course that individuals may be employed as supervisors at NYC restaurants. The course material enables supervisors to ensure that foods are prepared safely so that such establishments remain in compliance with the NYC Health code regulations, avoiding fines, customer illness and lawsuits.
  • What are the most commonly written violations at NYC restaurants?
  • Which violations are actually most likely to cause food borne illness?
  • How frequently are Restaurants closed by the Health Department?
  • How many individuals were struck ill at New York City restaurants last year?
Answers to these interesting questions highlight the importance of the course material.
The course material will be contextualized and made more relevant by the use of epidemiological data collected by the New York State Health Department, personal anecdotes, field experiences and hundreds of images in PowerPoint presentations and Food Safety videos. References to topical information from newsprint and internet media provoke and enliven discussion.
Because of the continued increase in demand for this course, the waiting time to enroll for the course at the Health Academy has increased from 1 week to 3-4 months. I am taking this opportunity to offer my services to students at institutions of learning, in English or Spanish. Contact: John Valasquez at (212) 280-9210 ext.18 or jvelasqu@health.nyc.gov

Health
Recent studies have show that COX-2 inhibitor drugs such as Vioxx and other pain-reducing medications pose serious health risks, especially when taken for chronic pain. What most people don't realize is that diet and nutrition can play a major role in providing many of the same beneficial pain relieving results as pharmaceuticals, but without the serious side effects. If you suffer with chronic pain associated with osteoarthritis, rheumatoid arthritis, menstrual pain and migraine, to name a few, you may be able to help relieve pain symptoms and inflammation with nutritional and herbal supplements.
